Mango-Lime Granitas
Quick Easy Recipe for Mango-Lime Granitas
This is just a quick recipe using simple syrup with lime zest, fresh pureed mango, and lime juice. Easy to make and very refreshing!
I made a very small batch of this for me and my son. Tweak the amounts in order to create more or less. Remember though that granitas is made by scraping the dessert mix as it freezes, so don't create more work for yourself by making too big of a batch.
For a more mango-ey flavored dessert, use up to 2 fresh mangoes. For a more lime-y dessert, follow as is below.
Ingredients:
1 fresh, ripe mango, cubed (how to cube a mango)
1/4 cup freshly squeezed lime juice (about 3 small fresh limes)
1/3 cup sugar (use Stevia or brown organic sugar for a healthier option)
1/3-1/2 cup water
Zest of one lime (how to zest a lime)
Instructions:
1. Zest the lime, set aside.
2. Heat sugar, water, and lime zest in a small saucepan until the sugar is completely dissolved. Set aside.
3. Juice the lime. Tip: To get the most juice out of the lime, gently but firmly roll the lime on the counter with your hand, back and forth until it becomes soft. Apply as much pressure as you can as you are rolling it. When it becomes easy to squeeze, it's ready to be juiced. Use a citrus fruit juicer for best results.
4. Put the simple syrup, lime juice, and cubed mango into a good blender. Blend until the quality is like juice (not like a smoothie).
5. Pour the mixture into either a small square freezer-safe container or a small round container. For best results, use something metal, as it freezes more quickly. However, a small round tupperware container will work fine.
6. Place the container into the freezer. Every 30 minutes, take the container out and scrape the sides into the middle of the bowl. The mixture will freeze outside in, so you should circle the sides every time to move frozen bits to the center.
7. Continue step 6 until the mixture becomes difficult to scrape or is the consistency that you want. For best results, cool the simple syrup before doing step 4.
